Traditional 50-grain vinegar has spent over four years in oak barrels gently undergoing the transformation from wine to vinegar. Prenzel vinegars are matured using centuries old technique developed by French masters in Orleans. The Orleans method is time consuming but stunning in the deeply layered flavours that result.

Prenzel Vincon began as a request from executive chefs to create a pre-reduced winestock. The result is a concentrate that contains four times the flavour of table wine without the alcohol or need for time consuming reductions. Vincon can replace red wine in cooking by quarter of what the recipe calls for. Casseroles, sauces, vinaigrettes and marinades are easy to make and full of flavour. It does not need refrigeration and once open will keep for six months.
